Moist and delicious plain cake. Not overly sweet. Good with fruit, cheese, and wine. Nice for dessert or for afternoon tea or coffee.

Also goes well with a cold glass of milk. Fast and simple to make. Requires minimum clean up (only one mixing bowl).
Ingredients: Into one good-sized mixing bowl: 3 eggs, 1 cup sugar, 1 cup unbleached flour, 1/3 cup oil (I use canola oil), 1 teaspoon baking powder, 1 teaspoon vanilla, 2 tablespoons plain yogurt (I use Greek yogurt). Use fork or whisk to beat batter. Don't make batter too smooth, leave some small lumps (like for pancakes).
Bake in loaf or small cake tin in 350 degree oven for about 40 minutes (cake should brown, toothpick in center should come out dry). Also works as vanilla cupcakes (baking time should be somewhat shorter).
Serve plain or with frosting. Goes well under ice cream, with cream cheese, with fresh strawberries, or other fresh fruit and whipped cream or plain yogurt.
Total prep time, including clean up: 50 minutes to 1 hour.
